A Very special place in national Uzbek cuisine's is Occupied by Sumalyak. During the ancient times and even today Sumalyak is prepared with some Rituals at the Start of Spring (Central Asian New Year Navroz, Nauroz). It is a Tradition that Sumalyak must be prepared with chanting, dancing, and with a cheerful mood. After cooling the Dish moves to a table. It is considered that this dish provides the men with physical and spiritual powers. Specially after long winters Vegetables and Fruits are yet to be sown. Dumalyak is a high Grade Food. Therefore before the Nauroz, Navroz festivities 15 to 20 days in advance Sumaliak is prepared from pure wheat Only.
